– Preheat oven to 350 degrees F

– You’ll need a 9×5 loaf pan (lightly sprayed)

Ingredients
1 1/4 cups whole wheat flour (or mixed if you prefer)
1 teaspoon baking soda
1/2 teaspoon baking powder
1 egg
1 egg white
3/8 cup of honey (or brown rice syrup)
1/4 cup low-fat plain yogurt
1/4 cup applesauce
1 teaspoon vanilla extract
3-4 bananas (very ripe and mashed)

Directions
Sift the flour, baking soda, and baking power together and set aside.

In another large bowl, blend egg, egg white, honey, yogurt, applesauce, and vanilla. Blend in mashed bananas.
Add in flour mix and mix until just combined.

Pour batter into pan and bake for 60 minutes. Test with a toothpick to make sure it’s done and enjoy!!

Note: I didn’t in this batch but you can definitely add a handful of blueberries, cranberries, chocolate (or carib) chips, or walnut pieces to the batter for variety.
