Sweet Potato Pancakes

Sweet Potato Pancakes:
– 250 mls liquid egg whites
– 120 gms cooked (and mashed) sweet potato
– Cinnamon to taste

1⃣. Blend ingredients for about 10 secs and pour batter into lightly sprayed pan.
2⃣. Cook on both sides and enjoy!

Tip: Be patient and allow to cook thoroughly or it will fall apart when trying to flip it and will turn into more of a sweet potato scramble (which is good too lol!)
